Harvest of the Month returns to campus 

We’re celebrating beets this month with a variety of menu offerings from beet rueben sandwiches to beet pancakes. Check the list below for the complete menu!

It’s part of University Housing & Dining’s relaunch of Harvest of the Month, which highlights an in-season fruit or vegetable in everything from soups to grain bowls.

The culinary team is excited to bring it back to campus, said Director of Campus Dining and Catering Kerry Paterson. Harvest of the Month was last featured in 2019.    

“Eating seasonally promotes health and nutrition, supports local economies and is often more environmentally sustainable, cost effective and accessible,” he said.

This month, menu items will celebrate beets, which are rich in Folate, Potassium, Magnesium and Fiber. They also contain phosphorous, iron, beta-carotene and vitamins A, B and C. Those nutrients are important for cardiovascular health, circulation, energy supply and muscle performance, bone strength, and more.

In the future, Paterson hopes to extend the focus of Harvest of the Month to include the local farms that help supply the produce.

“We would love to invite local producers to campus to meet and interact directly with the people enjoying the food,” he said.
