Ingredients
- 1 cucumber
- 1 tomato
- ½ of an onion
- 1 Tbsp. olive oil
- 1 Tbsp. honey
- 1 tsp. dried oregano
- salt and pepper to taste
- 1 lemon
Equipment
- large bowl
- cutting board
- knife
Makes 4 servings
Instructions
- Cut the cucumber in half lengthwise and then slice very thin.
- Dice the tomato and onion.
- In a large bowl, combine the cucumber, tomato and onion.
- Add the olive oil, honey and oregano. Add salt & pepper to taste.
- Squeeze the juice from the lemon into the bowl.
- Toss everything together until thoroughly mixed.
Serving Suggestion
This cucumber salad is a light and fresh side dish that goes great with pasta puttanesca!
