Cucumber Salad

Ingredients

  • 1 cucumber
  • 1 tomato
  • ½ of an onion
  • 1 Tbsp. olive oil
  • 1 Tbsp. honey
  • 1 tsp. dried oregano
  • salt and pepper to taste
  • 1 lemon

Equipment

  • large bowl
  • cutting board
  • knife

Makes 4 servings

Instructions

  1. Cut the cucumber in half lengthwise and then slice very thin.
  2. Dice the tomato and onion.
  3. In a large bowl, combine the cucumber, tomato and onion.
  4. Add the olive oil, honey and oregano. Add salt & pepper to taste.
  5. Squeeze the juice from the lemon into the bowl.
  6. Toss everything together until thoroughly mixed.

Serving Suggestion

This cucumber salad is a light and fresh side dish that goes great with pasta puttanesca!
