Harvest of the Month features broccoli in April 

We’re celebrating broccoli this month with a variety of menu offerings from beef and broccoli bowls at Arnold’s Nori Grill to mac n cheese with broccoli at West Side Grill at Marketplace West.

It’s part of University Housing & Dining’s relaunch of Harvest of the Month, which highlights an in-season fruit or vegetable in everything from soups to grain bowls.

The culinary team is excited to bring it back to campus, said Director of Campus Dining and Catering Kerry Paterson. Harvest of the Month was last featured in 2019.    

“Eating seasonally promotes health and nutrition, supports local economies and is often more environmentally sustainable, cost effective and accessible,” he said.

This month, menu items will celebrate broccoli, which is rich in vitamins C and K. It also contains folate, potassium and magnesium. They have nutrients that reduce the risk of cancer, help manage blood sugar, protect your gut, boost vitamin C and boost your heart health.

In the future, Paterson hopes to extend the focus of Harvest of the Month to include the local farms that help supply the produce.

“We would love to invite local producers to campus to meet and interact directly with the people enjoying the food,” he said.
